IRISH STYLE FARMHOUSE VEGETABLE SOUP

INGREDIENTS

Potatoes, Carrots, Leek, Onions

Celery, Vegetable Stocks

Place butter in a large pot and heat over a medium-high heat until melted.

Add in the leeks, potatoes and onions and fry for 2 minutes until aromatic.

Add in the carrots, celery and stock. Cook for 20 minutes until the potatoes and carrots are soft and tender.

Use a hand blender to puree the soup until thick and creamy.
